This is one of the best cooking varieties. The large, thick, greenish-pink stems have tender flesh with an excellent balance of sweetness and acidity.

Ideal Conditions:

Full sun in cooler climes but partial shade is preferable. Well-drained and fertile soil that is high in organic matter.
